Description

A delicious asparagus dish featuring crispy breading and a rich filling of melted Gouda and hearty ham, perfect for special occasions.


Ingredients

  • 12 Stangen Spargel (weiß oder grün)
  • 6 Scheiben Kochschinken
  • 2 Eier
  • 3 EL Mehl
  • 6 Scheiben Gouda
  • 100 g Paniermehl (Panko oder Semmelbrösel)
  • 2 EL Butterschmalz
  • Salz und Pfeffer

Instructions

  1. Prepare the asparagus by trimming the woody ends and blanching them in lightly salted water for 3-4 minutes.
  2. Form the rolls by laying a slice of ham and a slice of Gouda on a working surface, placing two asparagus stalks in the center, rolling everything around the asparagus, and securing with a toothpick.
  3. Set up the breading station with flour, beaten eggs, and breadcrumbs on three plates.
  4. Bread the rolls by coating them first in flour, then in eggs, and finally in breadcrumbs.
  5. Fry the rolls in heated clarified butter for 3-4 minutes on each side until golden brown, then drain on paper towels.

Notes

You can prepare the rolls a day in advance and store them in the refrigerator. For a healthier option, use an air fryer or bake at 200°C for 15-20 minutes.
