- 200 g wild garlic (Bärlauch)
- 2 shallots
- 1 lemon
- 2 tbsp butter
- 1 tbsp flour
- 100 ml white wine
- 200 ml milk
- 150 g cream cheese
- 400 g tagliatelle
- Parmesan cheese for serving
- Salt and pepper to taste
Instructions
- Wash the wild garlic thoroughly, dry, and finely chop it. Halve the shallots, peel, and dice them.
- Juice the lemon, setting it aside for later.
- In a pot, heat the butter over medium heat and sauté the shallots until translucent, about 2 minutes.
- Sprinkle in flour and cook for about 1 minute while stirring.
- Deglaze with white wine, stirring until combined.
- Add milk and whisk in cream cheese, simmering for 2 minutes.
- In a separate large pot, boil 5 liters of salted water. Cook the tagliatelle for about 3 minutes until al dente, then drain.
- Season the wild garlic sauce with salt, pepper, and lemon juice, then combine it with the drained tagliatelle.
- Serve the noodles on plates, generously topped with grated Parmesan.
Notes
For the best flavor, ensure the wild garlic is fresh and crisp. You can prepare the sauce in advance and reheat before serving.
