Description

A vibrant avocado salad bursting with flavor, featuring cherry tomatoes and a zesty lime-honey dressing.


Ingredients

  • 2 ripe avocados, diced
  • 250g cherry tomatoes, halved
  • 1 red onion, finely chopped
  • 1 bunch fresh cilantro, roughly chopped
  • Juice of 2 limes
  • 2 tablespoons honey
  • 3 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prepare the avocados by halving, removing the pit, and dicing the flesh. Keep them in their skin until use to prevent browning.
  2. Chop the cherry tomatoes into quarters and finely dice the red onion.
  3. Roughly chop the fresh cilantro, keeping the leaves intact for texture.
  4. Combine the avocados, cherry tomatoes, and red onion in a large bowl, being gentle to avoid mashing the ingredients.
  5. Mix the lime juice, honey, olive oil, salt, and pepper in a small bowl until well combined.
  6. Drizzle the dressing over the salad and mix carefully to coat the ingredients without mashing the avocados.
  7. Garnish with additional fresh cilantro and serve immediately for the best flavor.

Notes

To prevent browning, add avocados just before serving. Store in an airtight container and consume within 1-2 days.
