Instructions
- Prepare the avocados by halving, removing the pit, and dicing the flesh. Keep them in their skin until use to prevent browning.
- Chop the cherry tomatoes into quarters and finely dice the red onion.
- Roughly chop the fresh cilantro, keeping the leaves intact for texture.
- Combine the avocados, cherry tomatoes, and red onion in a large bowl, being gentle to avoid mashing the ingredients.
- Mix the lime juice, honey, olive oil, salt, and pepper in a small bowl until well combined.
- Drizzle the dressing over the salad and mix carefully to coat the ingredients without mashing the avocados.
- Garnish with additional fresh cilantro and serve immediately for the best flavor.
Notes
To prevent browning, add avocados just before serving. Store in an airtight container and consume within 1-2 days.
