Ingredients
- Rice paper
- Carrots, julienned

- Shrimp or tofu
- Peanut sauce or soy sauce for dipping
Instructions
- Prepare the vegetables: Slice carrots, cucumbers, and bell peppers into thin strips.
- Cook the shrimp (if using) according to package instructions until they are pink and tender.
- Soak the rice paper in warm water until soft and pliable.
- Arrange a small amount of vegetables, herbs, and shrimp or tofu in the center of the rice paper.
- Fold the sides over the filling and roll it up carefully to form a roll.
- Serve the spring rolls with your choice of dipping sauce.
